christmas in a muffin

I saw this recipe on Nigella’s website and she promised that these muffins had the true taste of christmas: clementines, nutmeg, cranberries and cinnamon. I baked them and they absolutely taste like christmas!

1 ovo
145 gr de mirtilhos secos
2 colheres de sopa de açúcar demerara

Aquecer o forno a 200C.

9 oz self rasing flour
3,5 oz sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 medium clementines
4 fl oz milk
2,5 fl oz ml oil
1 egg
5 oz of dried blueberries
2 tablespoons demerara sugar

Preheat oven to 400F.
In a recipent combine the flour, sugar, cinnamon, nutmeg and zest of the two clementines.
Squeeze the juice of the clementines in a measuring cup and add the milk until it reaches the 7 fl oz mark, add the egg and the oil and beat lightly.
Add liquid ingredients to the dry mixture and beat just enough to combine everything. Finally add the dried blueberries.
Spoon the batter into muffin cases and sprinkle with the demerara sugar. Bake in the oven for about 20 minutes.
