This is sinful, really, really sinful. If you like decadent, sugary desserts you’ll love this one!
The two main ingredients are dulce de leche which you can find canned in supermarkets (here in portugal it’s pretty common) and Marie cookies (the most popular cookies here).

1 can of dulce de leche (14 oz)
6.7 oz whipping cream (30–36% fat)
2 sheets of gelatin (you can use granulated, in Portugal it’s easier to find sheets)
10.5 oz marie cookies
6.7 oz of warm water
4 tablespoons of granulated coffee
3.5 oz of coconut flakes

Start by whipping the cream for about 2 minutes with an electric beater until it’s smooth, it doesn’t need to get too stiff. Mix in the dulce de leche and beat a bit more until it’s combined with the cream.

Now the boring part: take the gelatin sheets and cut them into small pieces, place in a bowl and with about 4 tablespoons of water (just enough to cover the pieces of gelatin) and microwave it for about 20 seconds on maximum power. Remove from the microwave (be careful because the bowl can get very hot) and with a fork mix the water and the gelatin until it all blends together, you may have to put it again in the microwave 2 or three times. Pour the cream mixture into the gelatin bowl (not the other way around, because the it would get clumpy) and mix everything with the electric beater (20 seconds is enough).

Dilute the granulated coffee in warm water in a shallow dish.

Now get the layers done: in a 7 inch springform pan or in individual recipients place a layer of marie cookies slightly drenched in the coffee and then a layer of the cream. Do this layers until the ingredients are over, don’t worry if it doesen’t look too perfect! Over the top layer sprinkle with coconut flakes.
Refrigerate for at least 4 hours.
