tarte de lima

lime tart

I’ve been wanting to bake a lime tart since forever. Lime tarts aren’t common in Portugal, don’t really know why. Anyway when I was squeezing the limes I could only remember the oh-so-nice smell of nice cool caipirinhas on beach, so maybe I should rename this recipe to “caipirinha tart”!

base
200gr de graham crackers trituradas
60gr de manteiga derretida
60gr de açucar

creme

crust
7 oz of crushed graham crackers
2 oz of melted butter
2 oz of sugar

filling
13.5 oz whipping cream (30–36% fat)
1 can of condensed milk (14 oz)
6 lime’s juice (about one cup)

lime zest for garnishing

For the crust mix the graham crackers and the sugar with the melted butter with your hands until it resembles wet sand. Press the crust over bottom and sides of a 9inch pie pan with removable bottom. Bake at a 350F oven for about 8 minutes.

For the filling beat the whipping cream with an electric mixer until it forms soft peaks, then add the condensed milk and the lime juice and beat just enough time to blend everything. Finally pour the filling over the crust (make sure it has cooled down) and garnish with the lime zest. refrigerate for about 4 hours before serving.
