When I saw this recipe in “Flagrante Delícia” I knew I had to try it. The thing is: I love baking cookies but usually the recipe calls for huge amounts of butter and they come out with a flavor way to intense for me, I know some people love it… not me! Anyway, this cookies only need 50 grams of butter and the fact that they are so easy to bake makes them my favourite cookies ever.
I made some changes to the original recipe because I didn’t have all ingredients and I decided to add the cherries because I guess they made a nice combination with the dark chocolate (and they had been standing in the cabinet for ages waiting to be eaten!).
Deixar arrefecer numa grade. |
1,7 oz soft butter 2,8 oz sugar 1 tablespoon vanilla extract 1 beaten egg 4,5 oz self-rising flour 1,7 oz dark chocolate chunks With an electric mixer cream the butter with the sugar for about 3 minutes. Add the egg, the vanilla extract and the flour mixing just enough to blend all the ingredients (don’t overmix: you’ll end up with dense and tough cookies). Finally just add the chocolate chunks and the candied cherries. Refrigerate the cookie dough for at least 30 minutes (I skipped this step… it was already 11pm!). With a spoon place small amounts of the cookie dough in a oven tray covered with parchment paper. Bake in a 190C oven for about 8 to 10 minutes, the cookies should be light golden in the edges but still a bit soft in the middle. Let them cool in a cooking rack. |
