
Nunca tinha feito creme queimado em casa, mas como recebi no natal um maçarico de cozinha decidi dar-lhe uso! A receita foi baseada nesta com algumas modificações, uma delas foi usar vagem de baunilha em vez de xarope porque adoro os grãozinhos de baunilha no creme queimado, dão-lhe um toque muito rústico.
A receita é apenas para 4 doses por isso se forem muitos em casa o melhor é dobrar os ingredientes!
I had never made crème brûlée at home, but I got kitchen torch for Christmas so I decided to give it some use! The recipe was based on this one with some modifications, one of them was to use vanilla beans instead of syrup because I love the little grains of vanilla in the crème brûlée, i guess it gives it a very rustic touch.
This recipe serves 4 so if there are many of you at home it’s better to double up all the ingredients!

1 ovo inteiro 1 cháv. de crème fraiche (usei este à venda no Continente) Aquecer forno a 140ºC. Numa taça bater ligeiramente os ovos com o açúcar. Reservar. Num tacho aquecer o crème fraiche, o leite e as sementes de baunilha até ficar bastante quente (para retirar as sementes da baunilha abrir a vagem no sentido longitudinal e raspar as sementes com uma faca). Quando se começarem a formar bolhinhas junto à borda do tacho (antes de começar a ferver) retirar do lume e juntar à mistura de ovos batendo sempre em velocidade baixa. Se se formar espuma retirá-la com uma colher. Distribuir por ramequins e colocá-los num tabuleiro próprio para ir ao forno (usei um tabuleiro de torta). Colocar água a ferver no tabuleiro até metade de altura dos ramequins. Levar ao forno durante cerca de 30 a 45 minutos, conforme prefira o creme mais liquido ou mais espesso. Após retirar do forno deixar arrefecer à temperatura ambiente e depois colocar no frigorífico no mínimo 2 horas. Antes de servir retirar do frigorífico com 30 minutos de antecedência, polvilhar com açúcar branco e queimar com um maçarico de cozinha. |

1 whole egg 1 cup crème fraiche (I used this one) Heat oven to 280F. In a bowl lightly beat eggs with sugar. Set aside. In a pan heat the crème fraiche, the milk and the vanilla seeds until it gets very hot (to remove the seeds from the vanilla pod open lengthways and scrape the seeds with a knife). When small bubbles start forming at the edge of the pan (before boilling) remove from heat and add to egg mixture beating constantly at low speed. If foam forms remove it with a spoon. Pour the liquid in the ramekins and place them in rectangular baking pan. Pour boiling water in the pan until it reaches halfway teh sides of the ramekins. Bake for 30 to 45 minutes, depending on how you prefer the cream: more fluid or thicker. After removing from oven let cool at room temperature, then refrigerate for at least 2 hours. Before serving remove from refrigerator 30 minutes in advance, sprinkle with white sugar and heat with a blowtorch until sugar caramelizes. |
